  • ½ teaspoon vanilla extract
  • ¾ – one cup all purpose flour
  • ½ – one cup chocolate chips

Instructions:

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside. In a medium bowl, cream together butter, sugar, brown sugar, salt, baking powder, and baking soda until light and fluffy. Stir in vanilla extract. Add flour gradually until dough is thick but still soft. Stir in chocolate chips. Drop dough by rounded tablespoons onto prepared baking sheet. Bake for 12-14 minutes, or until cookies are lightly golden brown and set. Cool on baking sheet for a few minutes before transferring to a wire rack to cool completely.

Pumpkin Spice Cookies:

Ingredients:

  • ½ cup butter, softened
  • ¾ cup sugar
  • ⅓ cup brown sugar, packed
  • ⅛ teaspoon salt
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon vanilla extract
  • ¾ – one cup all purpose flour
  • ½ – one cup pumpkin puree
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ⅛ teaspoon ground cloves
  • ½ cup chocolate chips (optional)

  • 40 Saltine crackers (one sleeve)
  • ½ cup butter, melted and divided in half
  • ⅓ cup brown sugar, packed
  • ½ teaspoon vanilla extract
  • ½ cup semi-sweet chocolate chips
  • ½ teaspoon vanilla extract

Instructions:

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside. Place saltines in rows on prepared baking sheet, leaving room between each cracker for spreading. In a small saucepan, melt butter over low heat. Once melted, pour butter over saltines and spread evenly. Bake for eight minutes. Remove from oven and let cool for one minute. Sprinkle brown sugar and vanilla extract over crackers, then return to oven and bake for an additional seven minutes until bubbly. Remove from oven and let cool completely on baking sheet before transferring to a wire rack to cool completely.
